You might also mention to her that the Chillean rose's Latin name is Grammostola rosea. She'll appreciate the educational aspect of Tarantula care. You could explain that the G.rosea is probably the most docile and harmless of all Tarantulas, that you can go on holiday for a month and it will be fine (provided you fill it's water dish before you go) and that there are many enthusiasts around the world for you to communicate with and share your hobby.
Is your mum scared of spiders? Perhaps if you offer to face up to one of your irrational fears she will make a deal and face up to one of hers.
Above all I'd recomend that you push the academic angle a bit. Write up an essay on Tarantula care, or the life cycle of the G.rosea. I bet that would tip the balance.
